This morning i added some of the yeast that i got from the persimmons (featured in previous posts) and added them to three gallons of cider. Now it is bubbling away, making carbon dioxide and alcohol from the fructose. I'm going to make some of this into hard cider, some into apple wine (hopefully effervescent), and some into apple jack, which is basically frost-distilled whiskey. . . . #wildfermentation #homebrew #hardcider #ebbelwoi #applejack #urbanhomestead #wildedibles #wildfood
