The Ebi Katsu Burger is a tasty Japanese-style burger with fresh lettuce, tomato, and savory tonkatsu sauce on top of crispy fried shrimp Ebi Katsu. It tastes great because it combines Japanese and American tastes.
Ingredients: 4 large shrimp Ebi. 4 burger buns. 1 cup panko breadcrumbs. 1/2 cup all-purpose flour. 1 egg, beaten. Salt and pepper to taste. 4 lettuce leaves. 4 slices of tomato. 4 tablespoons Japanese mayonnaise. 4 teaspoons tonkatsu sauce. Oil for frying.
Instructions: Butterfly the shrimp by cutting along the back and flattening them. Season the shrimp with salt and pepper. Dredge each shrimp in flour, dip in beaten egg, and coat with panko breadcrumbs. Heat oil in a deep fryer or skillet to 350F 175C. Fry the shrimp until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels. Toast the burger buns until lightly browned. Spread Japanese mayonnaise on the bottom half of each bun. Place a lettuce leaf and a slice of tomato on each bun. Put a crispy Ebi Katsu on top of the tomato. Drizzle tonkatsu sauce over the Ebi Katsu. Top with the other half of the bun. Serve hot and enjoy!

Let’s start with the Hire Katsu Burger (P360) which is your Hire Katsu set served in a burger form instead of with rice. You get a thick, crunchy and juicy pork cutlet topped with shredded cabbage, shiso leaves, Japanese pickles, sweet and tangy tonkatsu sauce, caramelized onion jam all placed in between a toasted brioche bun.
If you’ve ever wanted to get your hands dirty while eating Yabu’s famous katsu, now is your chance. No need for spoons and forks here. The Hire Katsu Burger is so thick and meaty that you will get more than a mouthful with every bite. Think of it as a different way of eating your katsu with its shredded cabbage and sweet tonkatsu sauce all in the palm of your hands. It’s also good for those in a hurry as you can easily have this for takeout for those quick lunch breaks.
Just look at how thick that burger is! You don’t get unlimited rice with this katsu burger, but you definitely won’t feel hungry either after finishing off this monster.
But I preferred their other burger creation which is the Ebi Katsu Burger (P420). I always like prawns and seafood so it was obvious that I would like this one. This crunchy ebi katsu is filled with chunks of Black Tiger Prawns topped with shredded cabbage, shiso leaves, Japanese pickles, spicy aioli and caramelized onion jam in a toasted brioche bun.
I really love this burger especially with its big chucks of prawns that you can clearly see inside, unlike other seafood or prawn burgers that only have small bits. It is so crunchy and so flavorful even with or without the spicy aioli that adds a delightful kick to the burger. For your side dish, you can choose either the Chicken Salad, which is part of their appetizers menu, or go for the more exciting Furikake French Fries which Chef Lee Jose specifically created for these burgers.
The Furikake French Fries (a la Carte - P175) are steak fries tossed with Japanese seasonings like nori bits and other ingredients. They are surprisingly good, even better than some other fries in American restaurants. You can also order these fries a la carte or choose them as part of your appetizer sets. I’m not sure how long these limited edition katsu burgers and fries will be available at Yabu so you better try them now while they are still here.
