Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 tablespoon Cajun seasoning. 1 tablespoon olive oil. 1 medium onion, thinly sliced. 1 bell pepper, thinly sliced. 3 cups shredded cabbage. 2 cloves garlic, minced. 1 tablespoon apple cider vinegar. Salt and pepper to taste. Chopped green onions for garnish.
Instructions: In a bowl, toss diced chicken with Cajun seasoning until evenly coated. In a large skillet, heat olive oil over medium heat. Add seasoned chicken to the skillet and cook until browned and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside. In the same skillet, add sliced onion and bell pepper. Cook until softened, about 5 minutes. Add shredded cabbage and minced garlic to the skillet. Cook until cabbage is wilted, about 3-4 minutes. Return cooked chicken to the skillet.
