INGREDIENTS:
½ cup #ProteinPowder (I used #JayRobb #Vanilla #EggWhiteProtein Powder) ⅓ cup #RawHoney
½ cup #PeanutPowder (I used #Jif)
¼ cup #Organic Peanut Butter (I used #BetterHealth’s self serve dispenser)
¾ cup of Gluten-Free Quick Cooking #Oats (I used #BakeryOnMain)
1 tsp #VanillaExtract
SPRINKLE TOPPING: (Optional)
⅛ cup Peanut Powder and ⅛ cup Organic #PowderedSugar blend together well and reserve aside for sprinkling.
DIRECTIONS:
1. Finely ground the gluten-free #quickoats in a food processor.
2. In a medium size mixing bowl combine the finely ground gluten-free quick oats, the peanut powder, protein powder and mix together well.
3. In a large mixing bowl combine the honey, the peanut butter, vanilla and whisk until it is creamy smooth.
4. Add the the dry ingredients into the #honey peanut butter mixture and mix well.
5. Using a tablespoon, scoop out enough dough to roll into 1"-1½" balls.
6. Place each ball about an 1" apart on a cookie sheet lined with parchment paper.
7. (This Step is Optional) Freeze the protein bites for about 10 minutes then roll them in the sugar mixture before placing them back on the cookie sheet. Another option is place the sugar mixture in a ziploc sandwich bag and take 2-3 protein bites and place them in the bag and shake the bag enough to coat each one of them and repeat the process until they are all coated. Place them back on the cookie sheet and refreeze them for another 10 minutes and they are all done.
8. Place the cookie sheet in the freezer for 20 minutes. Then transfer the protein bites into an air-tight container and store them in the refrigerator for up to 6 weeks, or you may freeze them for up to 3 months.
