Easy Empanadas with store bought pastry sheet.
- 1 package puff pastry sheet (2 sheets) = 8 empanadas, you can find this in a freezer section. I used one from pepperidge farm. I know it’s not the healthiest but this is a treat for me. maybe I’ll make it myself next time :)
-1 egg mixed well for egg wash
-any filling of your choice. Be creative!! I usually use leftover of some sort ;) It shouldn’t be too saucy or watery otherwise it’ll get messy. I used left over refried black beans that I made the other day (recipe is below) and also some berry compote that I just whipped up (fancy name for berries +sugar heated up) For the berry compote I added a tsp of cornstarch to make it thicker.
Thaw the pastry sheets at room temp. Once it’s soft enough to work with unfold the sheet and cut it into 4 squares. Put filling in the middle and brush egg wash around the edges, this works like a glue. Fold it in half to make a triangle. Carefully close and lightly push down the edges. Using a fork press down around the edges to secure. Make all 8. You can freeze them at this point for later. If you are going to make them, brush egg wash all over them and Bake at preheated oven at 425 for 20 minutes. I usually make bunch of them and freeze for later. Enjoy!!
