This is a quick and tasty Instant Pot recipe for refried black beans. You can eat these beans as a side dish or put them inside burritos, tacos, or enchiladas.
Ingredients: 1 cup dried black beans, rinsed and sorted. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 jalapeo, seeded and finely chopped. 1 teaspoon cumin. 1 teaspoon chili powder. 1 teaspoon oregano. 4 cups vegetable broth. Salt to taste. 2 tablespoons vegetable oil.
Instructions: Place the dried black beans in the Instant Pot. Add chopped onion, minced garlic, jalapeo, cumin, chili powder, oregano, and vegetable broth to the pot. Secure the lid and set the Instant Pot to high pressure for 25 minutes. Once the cooking time is complete, allow natural pressure release for 10 minutes, then manually release the remaining pressure. Carefully open the lid and use a potato masher to mash the beans to your desired consistency. Season with salt to taste. Turn on the Instant Pot's saut function and heat vegetable oil. Add the mashed beans to the hot oil and saut for 5-7 minutes or until they reach the desired thickness and consistency. Serve hot as a side dish or in your favorite Mexican-inspired dishes.
