“For a moment, or a second, the pinched expressions of the cynical, world-weary, throat-cutting, miserable bastards we've all had to become disappears, when we're confronted with something as simple as a plate of food.” ― Anthony Bourdain, Kitchen Confidential: Adventures in the Culinary Underbelly I first read kitchen confidential when I was just starting off in my restaurant career, although I didn't really know it. Being of little mind of what my next step would be, his words helped to show me and so many others what awaited us on the otherside of the line: the people, the struggles, the work. And that at the end of the day the only thing that mattered was the people working with you, the ones you love and how you felt about your last plate. This one will stick for a minute. #thanksanthonybourdain #enoughsenough (at Ann Arbor, Michigan)
