Pumpkin Kibbeh
PUMPKIN KIBBEH
Serves 8-12
Ingredients:
1 pound turnip greens , washed & patted dry
2 large onions, peeled, chopped
1 medium leek, trimmed, chopped and fully washed
2 garlic cloves, peeled and minced
1 can of chick peas rinsed and drained
1 red bell pepper, cored, seeded and diced
1 cup dry white wine
1 Tablespoon Pomegranate Molasses
1/3 cup of pine nuts
32 ounces plain cooked and pureed pumpkin
1 1/2 cups of fine bulgur
2 slices of American-style white bread (or any soft bread) – pulsed in a food processor
2 teaspoons of Aleppo pepper
1 teaspoon each of cumin, coriander, cinnamon, allspice, salt, white pepper
olive oil
3 Tablespoons melted butter
1. Oven to 400*
2. In a large, deep skillet, over low heat, add the onions, leeks, garlic, chick peas and red bell pepper with 2 Tablespoons olive oil and a pinch of salt. Saute 10 minutes until all are soft.
3. Pour in the wine, pomegranate molasses, sumac and all spices. Stir well and cook an additional 5-8 minutes until almost all of the liquid has evaporated. Take the pan off the heat and let cool.
4. Blend the pan mixture in a food processor or blender until completely smooth. Add the pumpkin and blend again.
5. Combine the semolina, bulgur wheat, and pumpkin vegetable puree
until you have a smooth firm mixture. Make golf ball size pieces out of the dough and set in a dish in the refrigertor.
Moorish Cheese Ball Dip
Entertaining friends and stuck for nibblies ideas? Here is a delicious and easy dip recipe we tried today.
INGREDIENTS
· 1 packet of Philadelphia cream cheese
· 1/2 cup of Tasty grated cheese
· 1/2 bottle of Gherkin Relish
· Chopped shallots, capsicum, bacon or ham (optional)
· Sesame seeds or curry powder (optional)
· NOTE: I doubled the ingredients to make two cheese balls - one rolled in sesame seeds and one in curry powder.
METHOD
1. Soften Philly on bench.
2. Add grated cheese, gherkin relish and optional extras. I used chopped shallots and capsicum only as we had vegetarians amongst our guests.
3. Mix well and roll into a ball.
4. Sprinkle all over with sesame seeds or curry powder. As I mentioned earlier, I doubled the ingredients to make one curry cheese ball and one sesame cheese ball.
5. Serve with your choice of savoury biscuits. My favourite is Veri Deli Water Crackers: Olive Oil & Sea Salt.
6. Enjoy while you can! (I guarantee it won’t last long.)
