Ingredients: 4 scoops chocolate ice cream. 1/4 cup Kahlua. 1 cup cold brewed coffee. Whipped cream optional. Chocolate shavings optional.

Instructions: Put two scoops of chocolate ice cream in a glass. Add a little over eight ounces of Kahlua to the ice cream. Add half a cup of cold-brewed coffee to the glass. Add more layers with the rest of the coffee, Kahlua, and ice cream. If you want, you can add whipped cream and chocolate shavings on top. Use a straw and spoon to serve right away.

Ingredients: 1 cup mascarpone cheese. 1 cup cream cheese. 1 cup heavy cream. 1 cup brewed strong coffee, cooled. 1/2 cup sugar. 1/4 cup cocoa powder. 1/4 cup coffee liqueur. 1 package ladyfinger cookies, crushed. Chocolate shavings for garnish.

Instructions: Mascarpone cheese, cream cheese, and heavy cream should be mixed together in a bowl until they are smooth and fluffy. In a different bowl, mix coffee liqueur, sugar, and brewed coffee until the sugar is gone. Dip ladyfinger cookies into the coffee mix and put a layer of them at the bottom of each parfait glass. Put some of the cheesecake mix on top of the cookies. Add more layers until the glasses are full, ending with a layer of the cheesecake mix. Sprinkle cocoa powder on top and chocolate shavings on top of that. Put it in the fridge for at least four hours or overnight to let the flavors mix. Enjoy! Serve cold.
