My favorite baked salmon
I love seafood. Ever since I was a child I have had an odd obsession with seafood. Shrimp, salmon, clams, octopus, you name it, and I love it. With the cusp of Spring creeping over the Rockies I find myself craving fresh fish like crazy! Being so landlocked is somewhat of a curse, and so when I find good fish, I jump on it. After experimenting with certain salmon recipes I can say with confidence that this might be the best recipe I have found. This is from a blog called Natashaskitchen.com. The best baked salmon ever: 1.5 lbs salmon fillets 2 Tbsp parsley, freshly chopped 2 large or 3 small garlic cloves, pressed 1.5 tsp Dijon mustard 1/2 tsp salt 1/8 tsp ground black pepper 1/8 cup mild olive oil (not extra virgin) 2 Tbsp of fresh lemon juice Preheat the oven to 450˚F. 1. Line a rimmed baking sheet with foil. 2. In a small bowl, mix together: 2 Tbsp chopped parsley, 2-3 pressed cloves garlic, 1.5 tsp Dijon mustard, ½ tsp salt, ⅛ tsp of pepper, ⅛ cup of olive oil and 2 Tbsp of lemon juice. 3. Slice salmon into even portions. 4. Lay them onto a lined baking dish with the skin-side-down. 5. Generously brush all sides of salmon with sauce and top with fresh slices of lemon. 6. Bake at 450°F for 12-15 min or until just cooked through and flaky. Don't over-cook or it will be dry. It doesn't take a lot to make salmon pop, and this recipe makes my mouth water whenever I prepare it. I would be willing to bet you could use this recipe for another cut of fish, if salmon isn't your thing.
