But first to choose from the menu: Kit settled on one of the 2 scampi offerings - Scampi served with paccheri, fermented chilli and chorizo. It’s a stunning looking dish and Kit polished everything up. Uncle had the Pulled Pork Sausage, which came with borlotti beans, cavolo nero and a fried egg. The pulled pork sausage defies your normal concept of what a sausage should be. This led to a discussion of using green jackfruit as a plant-based pull pork option. Kit is well versed with cooking green jackfruit, learning from his grandparents in his native Sri Lanka.
