I had fast food for dinner but mum wanted to eat the Minced Meat Noodle (肉脞面) so I rode the escalator down to the basement to buy her a takeaway bowl from 85 Redhill Teochew Fishball Noodles. As usual, thin yellow noodles or mia kia (幼面) with no chilli sauce added is her preference.

Mum preferred her noodles so I got the takeaway (S$5 + S$0.30 container) Minced Meat Noodle (肉脞面) from 85 Redhill Teochew Fishball Noodles at Sun Plaza. Hers is mee pok (面薄), characterized by its flat and yellow appearance and not the usual mee kia (幼面) or thin yellow noodles. The dry style noodles came with meat balls, fish dumpling, braised mushrooms, sliced and minced pork garnished with a whole lot of spring onions.

A few stalls away, I ordered my burgers from Ordinary Burgers. For the first one, I took up the Classic Beef Burger Meal (S$10.60) which adds French fries and a can of drink for S$3 extra. A freshly grilled smashed beef patty, made with 100% premium farm raised Australian beef and topped with Australian sauce. No idea what they meant by Australian sauce but it tasted like ketchup and mayonnaise with a dash of chilli powder in it.

The Spicy Chicken Burger (S$6) came with a crispy flour battered chicken, flash fried golden and marinated in a blend of hot sauce with a dash of purple mayo and fresh lettuce. While the patty is juicy and lightly spicy, the exterior looks over-fried. The purple mayonnaise seems more like a gimmick and tasted just like the plain white version.

Mum said that she sometime avoided buying from this stall as the queue is just too long. That is because their Bak Chor Mee (肉脞面) or Minced Meat Noodles is so popular, as it comes with plenty of ingredients or toppings. Let’s us see what is included in this bowl of dry-style thin noodles or mee kia. At a glance, I can see pork & chive dumpling, fish dumpling, fish balls, pork balls (hidden underneath), braised pig’s skin, fishcake slices, crispy sole fish (扁魚干/大地鱼/比目鱼), crispy pork lards and minced pork. The pig’s skin is just one piece but mum topped up extra for more to be added.

Yes, Bak Chor Mee (肉脞面) or in plain English is simply Minced Meat Noodles from Chong Pang. But it is just not that simple, you see this stall attracted daily long queue. Why? Because their version has a lot more ingredients added from pork & chive dumpling, fish dumpling, fish balls, pork balls, braised pig’s skin & trotter to fishcake slices, crispy sole fish (扁魚干/大地鱼/比目鱼), crispy pork lards and minced pork. The version I had is the dry style thin yellow noodles in savoury brown sauce.

This is one big bowl of Tang Hoon (冬粉) or cellophane noodles. The transparent noodle is made from starch (such as mung bean starch, potato starch, sweet potato starch, tapioca, or canna starch) and water. They are generally sold in dried form, soaked to reconstitute, and then used in soups, stir-fried dishes, or spring rolls. They are called "cellophane noodles" or Glass Noodles (粉丝) because of their cellophane or glass-like transparency when cooked. Cellophane noodles should not be confused with rice vermicelli, which are made from rice and are white in color rather than clear (after cooking in water).

From the extremely popular stall in Chong Pang came this takeaway bowl of Bak Chor Mee (肉脞面) aka Minced Pork Noodles. With the dried style mee kia (thin yellow noodles) are a number of ingredients such as fish ball, meat ball, dumpling, fish dumpling, braised pork beside the usual minced pork. Mum also asked for additional braised pig’s skin which she knows I loved it.

Mum saw others eating this Cellophane/Glass Noodles (冬粉) at Chong Pang Food Centre, so she bought it for me to try. The portion was huge and came with both pork and fish balls in addition to minced pork, fish dumpling 🥟 and fishcake slices. The transparent noodle is made from starch (such as mung bean starch, potato starch, sweet potato starch, tapioca, or canna starch) and water. Glass noodles are healthier than rice or wheat noodles because it contains less carbs and also lower in glycemic index.
