Ingredients: 4 tilapia fillets. 2 tablespoons olive oil. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. 1/2 teaspoon garlic powder. Salt and pepper to taste. 4 large flour tortillas. 1 cup cooked rice. 1 cup black beans canned or cooked. 1 cup shredded lettuce. 1 cup diced tomatoes. 1/2 cup diced red onion. 1/2 cup diced bell peppers any color. 1/2 cup shredded cheddar cheese. 1/2 cup sour cream. 1/4 cup chopped fresh cilantro. Lime wedges for garnish.
Instructions: Preheat your oven to 375F 190C. In a small bowl, mix together the olive oil, paprika, cayenne pepper, garlic powder, salt, and pepper to create a spicy seasoning blend. Place the tilapia fillets on a baking sheet lined with parchment paper and brush them generously with the spicy seasoning blend on both sides. Bake the tilapia in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork. While the tilapia is baking, warm the flour tortillas in a dry skillet or microwave until they are pliable. Assemble the burritos by placing a portion of cooked rice, black beans, shredded lettuce, diced tomatoes, red onion, and bell peppers in the center of each tortilla. Place a baked tilapia fillet on top of the filling in each tortilla. Sprinkle shredded cheddar cheese over the tilapia, followed by a dollop of sour cream and a sprinkle of fresh cilantro. Fold in the sides of the tortilla and then roll it up tightly to form a burrito. Serve the spicy tilapia burritos with lime wedges on the side for garnish.
