Ingredients: 4 boneless, skinless chicken breasts. 1 can 14 ounces artichoke hearts, drained and quartered. 8 ounces mushrooms, sliced. 2 cloves garlic, minced. 1/4 cup chicken broth. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 teaspoon dried oregano. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: Add salt, pepper, and dried oregano to chicken breasts to make them taste better. Warm up the olive oil in a big pan over medium-high heat. Before you add the chicken breasts, make sure both sides are golden brown. This should take about 5 minutes per side. Take the chicken out of the pan and set it aside. Put minced garlic in the same pan and cook for one minute. After you add the mushrooms, cook for about 5 minutes, or until they dry out and turn golden brown. Add the artichoke hearts cut into quarters and stir them in. Cook for two more minutes. Add the chicken broth and lemon juice, and scrape the pan's bottom to get rid of the bits of food stuck there. Cover the chicken breasts with the mushroom and artichoke mixture when you put them back in the pan. Cover the pan and let it cook on low heat for 10 to 12 minutes, or until the chicken is fully cooked and the internal temperature reaches 165F 75C. Before serving, sprinkle with fresh parsley.
