With a cup of tea or coffee, these vegan tea scones come out great. They are soft and flaky, and they taste great with dried fruit.
Ingredients: 2 cups all-purpose flour. 1/4 cup granulated sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1/3 cup vegan butter, chilled and diced. 1/2 cup almond milk. 1 teaspoon vanilla extract. 1/2 cup dried fruit such as raisins or cranberries.
Instructions: Warm the oven up to 400F 200C and put parchment paper on a baking sheet. Mix the flour, sugar, baking powder, and salt in a large bowl. When you add the cold vegan butter to the flour mixture, work it in with your fingers or a pastry cutter until it looks like big crumbs. Just until they are mixed in, add the almond milk and vanilla extract. Be careful not to mix too much. Add the dried fruit and mix it in until it's spread out evenly in the dough. Put the dough on a floured surface and knead it a few times until it starts to stick together. Make a circle out of the dough that is about an inch thick. Cut out scones with a floured round cutter. After preparing the baking sheet, put the scones on it and bake them for 12 to 15 minutes, or until they are lightly golden. Take it out of the oven when it's done and let it cool a bit before serving.
