This tasty flatbread has flavors from the Mediterranean, with the richness of Feta cheese, the earthiness of thyme, and the sweetness of oven-roasted tomatoes. Great for a quick and filling meal!
Ingredients: 1 Mediterranean flatbread store-bought or homemade. 1 cup cherry tomatoes, halved. 2 tablespoons olive oil. Salt and black pepper to taste. 1 cup crumbled Feta cheese. 2 tablespoons fresh thyme leaves. 1/4 cup red onion, thinly sliced. 2 cloves garlic, minced. 1 tablespoon balsamic glaze optional. Fresh basil leaves for garnish.
Instructions: Start by heating the oven to 400F 200C. Place the cherry tomatoes that have been cut in half on a baking sheet. Add 1 tablespoon of olive oil, salt, and black pepper. Place the tomatoes in an oven that has already been heated. Roast them for 15 to 20 minutes, or until they begin to turn brown and burst. Take it out and set it aside. Set the flatbread from the Middle East on a pizza stone or baking sheet. Spread the minced garlic evenly over the flatbread and brush it with the rest of the olive oil. Toast the tomatoes in the oven and then add the crumbled Feta cheese and thinly sliced red onion to the flatbread. Put the flatbread in the oven and bake it for 10 to 12 minutes, or until the cheese melts and the edges turn golden. Take the flatbread out of the oven and top it with fresh thyme leaves. If you want, drizzle with balsamic glaze and top with fresh basil leaves. Cut it up and serve it hot to enjoy the Mediterranean flavors!
