Ingredients: 8 oz gluten-free rice noodles. 2 chicken breasts, thinly sliced. 2 tablespoons vegetable oil. 2 cloves garlic, minced. 1 red bell pepper, sliced. 2 eggs, beaten. 3 tablespoons gluten-free soy sauce. 2 tablespoons brown sugar. 1 tablespoon lime juice. 1 cup bean sprouts. 3 green onions, chopped. 1/4 cup chopped peanuts. Lime wedges, for serving.
Instructions: Cook rice noodles according to package instructions. Drain and set aside. Heat vegetable oil in a large skillet over medium-high heat. Add minced garlic and sliced chicken breasts. Cook until chicken is no longer pink, about 5-7 minutes. Push chicken to one side of the skillet and pour beaten eggs into the other side. Scramble eggs until cooked through. Add sliced red bell pepper to the skillet and cook for 2-3 minutes. Stir in cooked rice noodles, gluten-free soy sauce, brown sugar, and lime juice. Cook for another 2-3 minutes, tossing everything together until well combined. Add bean sprouts and chopped green onions to the skillet. Cook for an additional 1-2 minutes. Remove from heat and garnish with chopped peanuts. Serve with lime wedges.
