I had already thrown all the other ingredients for banana muffins into the food processor (Vitamix is taking a little break right now... There was a daiquiri incident involving a spoon.... 🙄) when I realized Luca had the last 3 eggs for breakfast yesterday and I forgot to put them on my grocery list! I almost bailed on the whole thing... BUT then I remembered, you can make "eggs" out of ground up flax or chia seeds!! And I have both in my cupboard. CRISIS AVERTED!!! 😅 For 1 egg 1tbs ground flax/chia (If you only have whole seeds you can grind them yourself in a food processor, blender or coffee grinder) 3 tbs water Whisk together and let set in fridge 15 min until eggy consistency! #flaxeggs #chiaeggs #bananamuffins #rainydaybaking

1 tablespoon of flax meal + 3 tablespoons of water (let sit for 5 minutes) = 1 flax egg

So I kept hearing about these so called miraculous "flax eggs" and wanted to try them out so I did a little googling and used them in some homemade veggie burgers and some peanut butter cookies. They both turned out great!
The link below was the most helpful but I'm way too lazy/impatient to do it the way she said so I made it a little more simple.
Just took a tablespoon a ground flax seed, mixed it with a a fork in a little less than 3 tablespoons of water, and refrigerated the mixture for about 30 minutes, worked like a charm!
