Hello there! Ooo this is a fun question! I also love all the ones you named, you just made me very hungry haha.
I looove pasta, my favorite for pasta is that avocado pasta mentioned before (which you would like too since it is basically fresh green pesto but with an avocado added to the mix -you do have to spice it up more because the avocado mellows it out- and you make it more fluid with some of the cooking water of the pasta, mix it under the pasta, add halved cherry tomatoes and I love finishing off my plate with a lot of Parmesan cheese). I also make a mean tomato based sauce with onion, garlic, mushrooms, yellow pepper and zucchini that even my non-vegetarian parents are a big fan of. (it’s all in the spices and order of the veggies).
Some other favorites are cocos milk risotto with mushrooms, green asparagus and peas; oven baked sweet potatoes cut in half to fill with a mix of steamed carrots/avocado/pine nuts topped with a type of salad that according to google translate is named lamb's lettuce (no clue if that’s correct, it’s a very common type of lettuce here that has a more nutty flavor); anything with Falafel (wraps, bowls, with a stir fry); talking about stir fry add those to the list as well as they’re easy and versatile; as a Belgian I love fries so for the cheat days I’ll make fries with a veggie burger. Love veggie burgers and they’re fun to experiment with. My absolute favorite soup is zucchini soup (onions, leeks, zucchinis), but I love all soups. Ooo now I’m craving a good meal noodle soup.
*Looks at length of answer* Okay I’m going to leave it at those cus when it comes to food I can go on and on. There are way more dishes but then again I pretty much like anything. One of the things I love about being a vegetarian (besides the obvious ecological reasons etc) is that it’s just very easy in general. Sure you can go all out when you have company, but I live alone so I rather not spend hours in the kitchen. Just got to make sure you add enough green veggies, legumes and nuts to your diet, but you probably already now that lol.
