Bear’s birthday breakfast was this recipe for 🍓 Strawberry Cinnamon French Toast Roll Ups 🍓 via @spoonforkbacon And oh my word was this recipe a disaster! I made it exactly as written and came away with too few roll ups to fill the pan size they recommend, and wayyyy too much filling and strawberries and I ended up having to bake it like triple the time it called for. What a mess! So I had to lean on my experience and make it as well as I could. It never ceases to throw me when this happens. When a recipe doesn’t go as written or it just doesn’t turn out despite my best efforts. I have to try not to freak out. Fortunately this was salvageable. It was like a dense bread pudding (despite using half the egg mixture the recipe made) - and actually quite good served with the extra fresh strawberries I had leftover. And - Bear liked it. I started my Endocrinology rotation today and it’s basically just Diabetes left, right and centre! So, kinda ironic that I’m sharing a recipe packed with sugar. If you’re diabetic this recipe probably isn’t ideal for you! Or I’d recommend skipping the Nutella, using wholemeal bread and fill only with strawberries. 

Anyhoo.. Brunch is the most important meal of the day! 

These are so simple to make and looks semi-fancy, perfect for a lazy weekend morning in when you still gotta impress someone special. I swear by these when I’m having craving something sweet in the morning and have some spare time. Although, if I’m honest I’m more of a savoury kinda gal and if a boy really wanted to win me over he’d have a better chance serving me up grilled sourdough bread with avocado, poached eggs and bacon! 

They say a way to a man’s heart is through their tummy, why can’t it be the way to a lady’s heart too? Cause it’s certainly the way to mine.

French Toast Roll Ups 

sliced bread, nutella, egg, milk, banana and fresh strawberries (sliced), cinnamon, butter

Whisk the egg, a dash of milk and cinnamon together. Flatten the bread, then spread with nutella. Place a row of sliced banana and/or strawberries along the bottom of the slice of bread. Roll up the bread and the nutella will keep it sealed. Melt some butter in a pan on medium heat. Dip the rolled up bread in the egg wash, shake of the excess and place it on the pan. Fry the roll up until each side is golden brown. Repeat the process until you’ve made enough!

Serve with fresh fruit (and ice-cream if you’re feeling bold!). If you want to make it look prettier then dust with icing sugar!
