Easy California Roll Salad-Fresh Cucumber Twist

A light and creamy chilled soup with the perfect balance of cucumber freshness and avocado creaminess. Ideal for a refreshing appetizer or a light summer meal.

Ingredients: 2 large cucumbers, peeled and chopped. 2 ripe avocados, peeled and pitted. 1/2 cup fresh cilantro, chopped. 3 cups vegetable broth. 1/2 cup Greek yogurt. 1 clove garlic, minced. Juice of 2 limes. Salt and pepper to taste.

Instructions: In a blender, combine cucumbers, avocados, cilantro, vegetable broth, Greek yogurt, and minced garlic. Blend until smooth and creamy. Add lime juice, salt, and pepper to taste. Blend again to incorporate the flavors. Refrigerate the soup for at least 2 hours before serving to allow it to chill. Serve in bowls, garnished with additional cilantro if desired. Enjoy the refreshing Chilled Cucumber Avocado Soup!
