A vibrant and refreshing soup that captures the essence of spring with the sweetness of fresh green peas and a hint of mint.
Ingredients: 4 cups fresh green peas. 1 onion, chopped. 2 cloves garlic, minced. 4 cups vegetable broth. 1 tablespoon olive oil. Salt and pepper to taste. Fresh mint leaves for garnish.
Instructions: In a pot, saut onions and garlic in olive oil until softened. Add fresh green peas and continue to cook for 2 minutes. Pour in vegetable broth and bring to a simmer. Cook until peas are tender. Blend the soup until smooth using an immersion blender. Season with salt and pepper to taste. Serve hot, garnished with fresh mint leaves.

This Spring Pea Mushroom Risotto is a creamy and flavorful dish that perfectly captures the essence of spring. With the freshness of peas and earthiness of mushrooms, combined with the richness of Arborio rice and Parmesan cheese, every bite is a delight.
Ingredients: 1 cup Arborio rice. 3 cups vegetable broth. 1 cup fresh or frozen peas. 1 cup sliced mushrooms. 1/2 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup white wine. 2 tablespoons olive oil. 1/4 cup grated Parmesan cheese. 2 tablespoons chopped fresh parsley. Salt and pepper to taste.
Instructions: Heat the vegetable broth in a saucepan until it starts to simmer. Then turn down the heat and keep it warm. Set aside a large skillet and heat the olive oil over medium-low heat in it. Put in the garlic and onions, and cook them until they become clear. Add the Arborio rice to the pan and stir it around constantly for one to two minutes, until the edges of the rice become clear. Add the white wine and stir constantly while cooking until it's gone. Add the warm vegetable broth to the rice mixture a little at a time while stirring it often. Let the broth soak in after each addition before adding more. Pour in the broth and cook for about 15 minutes. Then add the peas and mushrooms and stir them in. It will take about 5 to 10 more minutes of stirring and adding broth until the rice is creamy and soft. Add the chopped parsley, salt, and pepper after taking the pan off the heat. If you want, you can serve it hot and top it with more Parmesan cheese and parsley.

Put the extra-virgin olive oil, white wine vinegar, salt, and pepper in a small bowl and mix them together with a whisk. Pour the dressing over the salad and toss it gently to cover everything. Serve right away or put in the fridge to enjoy later. Have fun!
