This creamy broccoli soup is not only delicious but also keto-friendly and gluten-free. It's perfect for any time of the year and makes for a comforting meal.
Ingredients: 4 cups broccoli florets. 1 small onion, diced. 2 cloves garlic, minced. 4 cups chicken or vegetable broth. 1 cup heavy cream. 2 tablespoons olive oil. Salt and pepper to taste. Optional: grated cheddar cheese for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic. Saut until onions are translucent. Add broccoli florets to the pot and cook for 5 minutes. Pour in chicken or vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until broccoli is tender. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend until smooth, then return to the pot. Stir in heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes. Serve hot, garnished with grated cheddar cheese if desired.
