These cute and delicious pumpkin-shaped sugar cookies are sandwiched together with frosting and adorned with colorful sprinkles. Perfect for Halloween or any fall-themed celebration!
Ingredients: 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 teaspoon vanilla extract. 1 large egg. 3 cups all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon salt. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. Orange food coloring gel. Frosting of your choice. Sprinkles of your choice.
Instructions: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the vanilla extract and egg to the butter-sugar mixture and mix until well combined. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Divide the dough in half. Add orange food coloring gel to one half and knead until the color is evenly distributed. Flatten both dough halves into discs and wrap them separately in plastic wrap. Refrigerate for at least 1 hour. Preheat your oven to 350F 175C and line baking sheets with parchment paper. Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use pumpkin-shaped cookie cutters to cut out shapes from the rolled dough. Place the pumpkin shapes on the prepared baking sheets and bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely. Once the cookies have cooled, spread your favorite frosting on the bottom side of one pumpkin shape. Sandwich the frosted side with another pumpkin shape, pressing gently to make a cookie sandwich. Roll the edges of the frosting in sprinkles of your choice to decorate the cookie sandwich. Repeat the process with the remaining cookies.
