Ingredients: 1 cup all-purpose flour. 1/4 cup granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon salt. 1/2 cup canned pumpkin puree. 1/2 cup buttermilk. 1/4 cup vegetable oil. 1 large egg. 1/2 teaspoon vanilla extract. 8 candy eyeballs. 1/4 cup cream cheese frosting store-bought or homemade.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with cupcake liners. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, mix the pumpkin puree, buttermilk, vegetable oil, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack. Once cooled, spread a thin layer of cream cheese frosting on top of each cupcake. To create the mummy effect, place two candy eyeballs on each cupcake, slightly spaced apart to resemble mummy eyes.
