Ingredients: 1 1/2 cups all-purpose flour. 2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 2 large eggs. 1/4 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup unsalted butter, melted. 1/2 cup molasses. 1 cup buttermilk. 1 teaspoon vanilla extract.
Instructions: Mix the salt, ginger, cinnamon, cloves, nutmeg, baking powder, and baking soda with a whisk in a large bowl. First, beat the eggs in a different bowl. Then, add the brown sugar, molasses, buttermilk, granulated sugar, and vanilla extract. Mix everything together well. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Watch out not to mix too much; it's okay to have some lumps. Get your waffle iron hot and coat it with cooking spray that doesn't stick or a little melted butter. Follow the maker's directions and pour the waffle batter onto the hot waffle iron.
