This healthier take on the traditional Greek dish is provided by this Paleo Lamb Gyro with Tzatziki Sauce recipe. Wrapped in crisp lettuce leaves or paleo-friendly wraps, this dish consists of grass-fed lamb marinated in Mediterranean spices, grilled to perfection, and served with a dairy-free tzatziki sauce.
Ingredients: 1 lb grass-fed lamb, thinly sliced. 1 tbsp olive oil. 1 tsp dried oregano. 1 tsp dried thyme. 1 tsp garlic powder. 1/2 tsp onion powder. 1/2 tsp ground cumin. 1/4 tsp paprika. Salt and black pepper to taste. Lettuce leaves or paleo-friendly wraps, for serving. For the Tzatziki Sauce:. 1 cup coconut milk yogurt. 1/2 cucumber, grated and drained. 2 cloves garlic, minced. 1 tbsp lemon juice. 1 tbsp fresh dill, chopped. Salt and black pepper to taste.
Instructions: Combine olive oil, paprika, cumin, thyme, onion, garlic, and cumin powders with salt and pepper in a bowl. Place the lamb slices in and mix to coat. Give it a minimum of half an hour to marinade. Turn the heat up to medium-high on a grill or grill pan. The marinated lamb slices should be cooked to your preferred doneness by grilling them for three to four minutes on each side. Make the tzatziki sauce while the lamb is cooking. Add the grated cucumber, minced garlic, lemon juice, chopped dill, and coconut milk yogurt to a bowl. To taste, add salt and pepper for seasoning. After the lamb is done, take it off the grill and give it some time to rest. Cut thinly. To serve, arrange paleo-friendly wraps or lettuce leaves on a platter. Add sliced lamb on top and cover with tzatziki sauce. Have fun!
