Put your grilled cheese game up a notch with this fancy version made with fig jam, honey, goat cheese, brie, and Gruyre. Great for a cozy get-together or a casual party with friends.
Ingredients: 8 slices of artisanal bread sourdough or multigrain. 8 oz. brie cheese, thinly sliced. 4 oz. goat cheese. 4 oz. Gruyre cheese, grated. 2 tbsp fig jam or honey. 2 tbsp butter, softened.
Instructions: On one side of each piece of bread, put fig jam or honey. Spread brie, goat cheese, and Gruyere cheese out evenly on 4 pieces of bread. Place the last few slices of bread on top, jam or honey side down. Put butter on the outside of each sandwich. Set a grill pan or skillet over medium heat to warm it up. Put the sandwiches in the pan and use a spatula to gently press them down for about 34 minutes on each side until they turn golden brown. Take it off the heat and let it cool a bit before cutting it in half diagonally.
