Cottage Cheese Pizza Bowl
Bell Pepper Pizzas are a delicious and healthy twist on traditional pizza. Instead of a dough crust, we use bell peppers as the base, making them low-carb and packed with vitamins. These hand-held veggie pizzas are a great way to enjoy all your favorite pizza flavors without the guilt.
Ingredients: 4 large bell peppers, any color. 1 cup tomato sauce. 1 cup shredded mozzarella cheese. 1/2 cup sliced black olives. 1/2 cup sliced mushrooms. 1/2 cup diced onions. 1/2 cup diced tomatoes. 1/4 cup chopped fresh basil. 2 tablespoons olive oil. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Turn on your oven and heat it up to 375F 190C. Peel the bell peppers and cut off the tops. Then take out the seeds and membranes. Rinse them really well. Put the olive oil in a big pan and heat it over medium-low heat. It will take about 5 minutes of cooking after adding the mushrooms and diced onions. Add the black olives and diced tomatoes and mix well. Add two more minutes of cooking. To taste, add salt and pepper to the vegetable mix. Put some tomato sauce in the middle of each bell pepper and then add the sauted vegetables on top. Add mozzarella cheese shreds to the top of each stuffed bell pepper. Put the stuffed bell peppers on a baking sheet and bake in a hot oven for 20 to 25 minutes, or until the cheese melts and the peppers are soft. Take the pizzas with bell peppers out of the oven and top them with fresh basil leaves. Enjoy your healthy hand-held pizzas while they're still hot!

Ingredients: 1 lb ground beef or ground turkey. 1 onion, chopped. 2 cloves garlic, minced. 1 green bell pepper, chopped. 1 can 14 oz diced tomatoes. 1 can 6 oz tomato paste. 2 tsp dried oregano. 1 tsp dried basil. 1/2 tsp salt. 1/4 tsp black pepper. 1/2 cup sliced black olives. 1/2 cup sliced pepperoni nitrate-free for Paleo. 2 cups cauliflower florets. 1 cup sliced mushrooms. 1 cup spinach leaves. 2 cups grated Paleo-friendly cheese e.g., almond or coconut cheese.
Instructions: Preheat your oven to 375F 190C. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat. Add the chopped onion, minced garlic, and green bell pepper to the skillet. Cook for a few minutes until the vegetables are softened. Stir in the diced tomatoes, tomato paste, dried oregano, dried basil, salt, and black pepper. Simmer for about 10 minutes. In a separate pot, steam the cauliflower florets until they are slightly tender but not mushy, about 5 minutes. Drain and set aside. In a greased 9x13-inch baking dish, layer the cooked meat and vegetable mixture. Add the sliced black olives, pepperoni slices, steamed cauliflower, sliced mushrooms, and spinach leaves on top of the meat mixture. Sprinkle the grated Paleo-friendly cheese evenly over the casserole. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden brown. Remove from the oven, let it cool for a few minutes, and then serve your delicious Paleo Pizza Casserole.

Ingredients: 1 medium head cauliflower, grated. 1/2 cup almond flour. 2 tbsp flaxseed meal. 1 tsp dried oregano. 1/2 tsp garlic powder. 1/4 tsp salt. 1/4 cup tomato sauce. 1 cup mixed vegetables such as bell peppers, mushrooms, onions. 1/4 cup sliced olives. 1/2 cup dairy-free cheese. Fresh basil leaves for garnish.
Instructions: Warm the oven up to 425F 220C. Grate the cauliflower and mix it with almond flour, flaxseed meal, salt, oregano, garlic powder, and oregano. Mix until you get a dough. Place the cauliflower dough on a baking sheet lined with parchment paper. Shape the dough into a thin crust that is about 1/4 inch thick. It will be golden and firm after 20 to 25 minutes in the oven. Take it out of the oven and cover the crust with tomato sauce. Add olives, mixed vegetables, and dairy-free cheese on top. Put the pizza back in the oven and bake for another 10 to 15 minutes, until the cheese melts and bubbles. Before serving, sprinkle with fresh basil leaves. Cut it up and enjoy!
