Ingredients: 2 cups all-purpose flour. 1 cup granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup almond milk. 1/2 cup vegetable oil. 2 tablespoons apple cider vinegar. 2 teaspoons vanilla extract.
Instructions: Preheat oven to 350F 175C. Grease and flour two 8-inch round cake pans. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In a separate bowl, mix almond milk, vegetable oil, apple cider vinegar, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until smooth. Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove cakes from oven and let them cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
