Homemade baked chips and mushy peas!
Served with a nice slice of battered cod 😉
To make the chips:
Cut potatoes into shape
Place them in water and soak for about an hour
Drain the water & rinse chips to get rid of the starch
Put chips in a pot of cold water, and put on the boil
When water comes to boil, remove chips and put them on drying rack
Allow chips to cool (they should still be firm!)
Preheat oven to 220 degrees
Toss blanched chips in olive oil and pop them in the oven
Cook for half an hour until golden brown, turning regularly
Finish with a sprinkling of rosemary salt!
To make the mushy peas:
Slice red onion and saute in butter
Add one clove of minced garlic
Add frozen peas
Add 250ml of stock
Add fresh mint
Being to the boil and simmer until the peas are cooked
Blitz in the blender and finish with lemon, salt and pepper!

This is a really good version of a healthy sweet and sour pork. The sauce uses dates and dried apricots for sweetness and it works really well. The pork tenderloin is perfectly tender. I used fresh pineapple and so I also had to buy pineapple juice. There are a lot of ingredients. I chopped everything in the morning and I made the two sauces in the morning. So at dinner time it was very quick to get dinner on the table.
