Starting Monday right!!!
I do find that starting the week with good intentions helps you get the mind right 😉
When I tell you this boy can cook a perfect steak!
Toasted the baguette in the steak pan 🤤
Chilli con carne!
The easiest thing to cook ever?
Fry onions, garlic and carrots in a tablespoon of oil
Add spices and cook for 5 mins - I used a teaspoon each of:
Corinander power
Cumin power
Paprika
Cayenne
Chilli powder
Add mince beef and brown off - season well
Melt a beef stock cube in 300ml hot water and add
Add a tin of chopped tomatoes and a few tablespoons of tomato puree, and cook for 20mins
Finally, add your kidney beans and cook for another 5mins
Serve with rice! And, if you fancy it, cheese and sour cream 😉
Homemade baked chips and mushy peas!
Served with a nice slice of battered cod 😉
To make the chips:
Cut potatoes into shape
Place them in water and soak for about an hour
Drain the water & rinse chips to get rid of the starch
Put chips in a pot of cold water, and put on the boil
When water comes to boil, remove chips and put them on drying rack
Allow chips to cool (they should still be firm!)
Preheat oven to 220 degrees
Toss blanched chips in olive oil and pop them in the oven
Cook for half an hour until golden brown, turning regularly
Finish with a sprinkling of rosemary salt!
To make the mushy peas:
Slice red onion and saute in butter
Add one clove of minced garlic
Add frozen peas
Add 250ml of stock
Add fresh mint
Being to the boil and simmer until the peas are cooked
Blitz in the blender and finish with lemon, salt and pepper!

And just like that - it's back to work!
This lovely breakfast sarnie was made for me by my darling other half, served with a mug of freshly brewed coffee 🤤
Delicious and healthy lunch today! 🤤
Panko-breaded Chicken Breast & Brown Rice Salad
For the rice:
Grind cumin seeds, coriander seeds and chipotle chilli
Add to cooked brown rice
Mixed in cooked butternut squash, cannelloni beans and feta cheese
Add loads of fresh coriander! (Could swap for mint too)
Finish with lime juice, spring onions and salt & pepper
For the chicken:
Butterfly the breasts and bang out to thin strips
Marinate in lemon, fresh basil, garlic, and salt & pepper
Dip in beaten egg, then in panko breadcrumbs
Bake for 20 mins at 180 degrees
I also banged together some Sriracha and Greek yoghurt for a tasty dip!

This little beauty was made with:
6 eggs
Tomatoes
Spinach
Peppers
Parmesan
Chicken & Chorizo Kebabs
These banged on the BBQ!
Marinate the chicken breast in:
Dried oregano, cumin and basil
A few tablespoons of chilli sauce
Salt, pepper and the juice of a lime
Then I skewered the chicken up with some chorizo, and made a brown rice salad with some BBQ'd corn.
Heaven! And super healthy!
Simple Chicken Wraps
These always hit the spot!
Made extra special with some Greek yoghurt and hummus!
Aubergine Parmigiana
Only 1300 kcals for the whole thing!
We sliced the aubergine longways and grilled them on the BBQ!
Then layed with our tomato sauce, fresh basil, mozzarella and parmesan cheese.
Cooked for 20 minutes on 180 - easy 😀
Tomato sauce:
2 X tins of chopped tomatoes
2 X teaspoons of tomato puree
1 X teaspoon dried basil
1 X teaspoon salt
1 X teaspoon black pepper
Pulled Chicken Burgers
Great for leftovers!!!
We used left over roast chicken: pulled it from the bone and cooked it for 2 mins with a dash of water to wake it up!
Then stuck it under the grill with some delicious cheddar cheese.
Heaven! 🤸
Breaded chicken breasts with cheddar, bacon, and garlic yoghurt sauce 🤾
Healthy chicken burgers (honestly!)
Chicken Burgers:
Butterfly and flatten out chicken breasts into strips
Marinate chicken in lemon, basil, garlic, salt & pepper
Blitz some hardened bread for breadcrumbs (we used a baguette)
Dip marinated chicken in egg and breadcrumbs and cook for 20 minutes at 180°C
Put a slice of cheese on each chicken and roast for another 5 minutes
Yoghurt Sauce:
Mix diced garlic, onion and pickles into Greek yoghurt
Add crushed mustard seeds, salt and pepper
Squeeze in half a lemon!
Portobello Mushroom Burger & Homemade Slaw 👌
This one's simple - and cheap! :)
Grill your portobello mushroom until almost cooked (a few minutes), then add cheese and breadcrumbs and grill a little bit more!
For the slaw:
Half a White Cabbage
1 X Carrot
1 X Red Onion
Few spoons of Greek yoghurt
(switch out the yoghurt for a vegan alternative if you like!)
Spoon of Mustard
Juice of 2 limes
Lockdown soda bread!
THE most simple bread recipe.
I have no yeast in the house! And we're avoiding the supermarket at all costs - but I wanted homemade bread.
So - throwing back to our trip to the beautiful Irish countryside, where I first tried freshly baked SODA BREAD. ♥️
300g plain flour (you can use any flour you have!)
3/4 teaspoon bicarbonate of soda
3 teaspoons of any vinegar you have
Salt
150ml water
Absolutely lovely when fresh out of the oven and covered in salty butter! Now we just need the Irish sausages and black pud!
I think I could survive on sandwiches you know 😉
Smoked salmon really is one of my faves!

Now this is a salad ...
