Ingredients: 2 ripe avocados. 2 slices of bread sourdough or whole grain. 2 poached eggs. 1 tablespoon fresh chives, chopped. Salt and pepper to taste.
Instructions: Start by making the rosemary chimichurri: In a food processor, combine 1/2 cup fresh parsley, 2 cloves garlic, 2 tablespoons fresh rosemary leaves, 2 tablespoons red wine vinegar, 1/4 cup olive oil, salt, and pepper. Pulse until well combined. Set aside. Toast the slices of bread until they are golden brown and crispy. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and season with salt and pepper. Poach the eggs: Bring a pot of water to a simmer. Add a splash of vinegar to the water. Gently crack the eggs into separate cups or ramekins. Create a gentle whirlpool in the simmering water and carefully slide the eggs into the whirlpool. Poach for about 3-4 minutes for a runny yolk, or longer if desired.
