Enjoy these tasty pumpkin caramel cheesecake bars that are low in carbs and have a crunchy streusel topping. Plus, they're rich, creamy, and full of warm pumpkin spice flavors, so you can eat them without feeling bad about it.
Ingredients: For the crust:. 1 1/2 cups almond flour. 1/4 cup powdered erythritol. 1/4 cup melted butter. For the cheesecake filling:. 16 oz cream cheese, softened. 1/2 cup powdered erythritol. 1/2 cup pumpkin puree. 2 eggs. 1 tsp vanilla extract. 1 tsp pumpkin pie spice. For the streusel topping:. 1/4 cup almond flour. 1/4 cup chopped pecans. 2 tbsp powdered erythritol. 2 tbsp cold butter, diced. For the caramel sauce optional:. 1/4 cup sugar-free caramel sauce.
Instructions: Start by heating the oven to 350F 175C. Melted butter, almond flour, and erythritol powder should all be mixed together in a bowl. To make the crust, press the mixture into the bottom of a 9x9-inch baking dish that has been greased. For 10 minutes, bake the crust. Take it out of the oven and let it cool down a bit. Cream cheese and powdered erythritol should be mixed together in a different bowl until they are smooth. Eggs, pumpkin pie spice, vanilla extract, and pumpkin puree should all be added. Mix everything together well. On top of the crust that has cooled, pour the cheesecake filling. Mix almond flour, chopped pecans, powdered erythritol, and cold diced butter together to make the streusel topping. Mix it with your hands or a fork until it's crumbly. The streusel should be put on top of the cheesecake filling. Just put it in the oven for 25 to 30 minutes, or until it's set. After the cheesecake bars are completely cool, you can drizzle them with sugar-free caramel sauce if you want to. Put it in the fridge for at least two hours before cutting it into bars. Enjoy!
