Vegan Cauliflower and Penne with Carrots
Delicious and good for you These bowls of BBQ chicken and cauliflower couscous have the smokey flavors of grilled chicken mixed with soft cauliflower and fluffy couscous. Every bite has just the right amount of different tastes and textures.
Ingredients: 4 boneless, skinless chicken breasts. 1 cup cauliflower florets. 1 cup couscous. 1/2 cup BBQ sauce. 2 tablespoons olive oil. 1 teaspoon smoked paprika. 1 teaspoon garlic powder. Salt and pepper to taste. Fresh cilantro for garnish.
Instructions: Preheat grill to medium-high heat. In a bowl, mix BBQ sauce, olive oil, smoked paprika, garlic powder, salt, and pepper. Brush the chicken breasts and cauliflower florets with the BBQ sauce mixture. Grill the chicken for 6-8 minutes per side or until fully cooked. Grill the cauliflower for 4-5 minutes, turning occasionally, until tender and slightly charred. While grilling, cook couscous according to package instructions. Slice the grilled chicken into strips. Fluff the couscous with a fork and divide among bowls. Top with grilled chicken, cauliflower, and garnish with fresh cilantro. Drizzle with additional BBQ sauce if desired. Serve immediately and enjoy!

Vegan meatballs made with quinoa, mushrooms, and lentils that taste great and are good for you. These meatballs are great for a plant-based meal because they are full of protein and flavor.
Ingredients: 1 cup quinoa, cooked. 1 cup mushrooms, finely chopped. 1 cup lentils, cooked and mashed. 1/2 cup breadcrumbs. 1/4 cup nutritional yeast. 1/4 cup flaxseed meal mixed with 1/2 cup water, set aside for 5 minutes. 1/4 cup fresh parsley, chopped. 2 cloves garlic, minced. 1 teaspoon onion powder. 1 teaspoon dried oregano. Salt and pepper to taste. 2 tablespoons olive oil for baking.
Instructions: Before you start cooking, heat the oven to 375F 190C. Cooked quinoa, chopped mushrooms, mashed lentils, breadcrumbs, nutritional yeast, flaxseed mixture, parsley, minced garlic, onion powder, dried oregano, salt, and pepper should all be mixed together in a large bowl. Combine well. Put the meatballs on a baking sheet that has been lined with foil. For a golden crust, brush a little olive oil on top of each meatball. Warm the oven up and put the meatballs in it. Bake for 25 to 30 minutes, or until they are golden and firm. Serve hot on top of quinoa or pasta or with your favorite sauce.

These bright falafel burgers made with beetroot are full of flavor and good for you. When you mix earthy beetroot, savory chickpeas, and fragrant spices, you get a tasty and filling meal. Great for a dinner without meat!
Ingredients: 2 cups cooked chickpeas. 1 cup grated beetroot. 1/4 cup chopped red onion. 2 cloves garlic, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon smoked paprika. 1/4 cup chopped fresh parsley. 1/4 cup chickpea flour. Salt and pepper to taste. 4 burger buns. Lettuce leaves. Sliced tomatoes. Sliced red onion. Tahini sauce or hummus, for topping.
Instructions: In a food processor, combine chickpeas, grated beetroot, red onion, garlic, cumin, coriander, smoked paprika, parsley, chickpea flour, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky. Form the mixture into four patties. Heat a skillet over medium heat and lightly oil it. Cook the patties for 4-5 minutes on each side, or until golden brown and heated through. Toast the burger buns. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a beetroot falafel patty, sliced tomato, sliced red onion, and a dollop of tahini sauce or hummus. Top with the other half of the bun and serve immediately.

Ingredients: 2 boneless, skinless chicken breasts, sliced. 1/4 cup gluten-free soy sauce. 2 tablespoons creamy peanut butter. 2 tablespoons lime juice. 2 tablespoons honey. 1 clove garlic, minced. 1 teaspoon grated ginger. 4 cups mixed salad greens. 1 cup shredded carrots. 1/2 cucumber, thinly sliced. 1/4 cup chopped peanuts. 2 green onions, chopped.
Instructions: Put peanut butter, lime juice, honey, garlic, and ginger in a bowl. Add soy sauce and mix well. Set a grill pan on medium-high heat. About 4 to 5 minutes on each side, grill chicken slices until they are fully cooked. Put mixed greens, shredded carrots, and cucumber slices in a large salad bowl. Put slices of grilled chicken on top of the salad. Put the satay dressing on top of the chicken and salad. Add green onions and chopped peanuts on top. Toss the ingredients together gently to mix them. Serve right away and enjoy!

Ingredients: 1.5 lbs flank steak, thinly sliced. 1/2 cup coconut aminos. 1/4 cup apple cider vinegar. 3 tablespoons sesame oil. 3 cloves garlic, minced. 2 tablespoons grated ginger. 2 tablespoons honey optional, omit for Whole30. 2 green onions, thinly sliced. 1 tablespoon sesame seeds. 1/4 teaspoon black pepper. 1/4 teaspoon red pepper flakes optional, adjust to taste.
Instructions: In a bowl, whisk together coconut aminos, apple cider vinegar, sesame oil, minced garlic, grated ginger, honey if using, black pepper, and red pepper flakes. Add thinly sliced flank steak to the marinade, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight. Heat a grill or grill pan over medium-high heat. Remove the marinated beef from the refrigerator and let it sit at room temperature for about 10 minutes. Grill the beef slices for 2-3 minutes on each side, or until desired level of doneness is achieved. You can also cook them in a skillet over medium-high heat if a grill is not available. Once cooked, transfer the beef to a serving platter and garnish with sliced green onions and sesame seeds. Serve hot with cauliflower rice or lettuce wraps for a Paleo/Whole30-friendly meal.
