This recipe makes a tasty pasta dish with charred cherry tomatoes, tender chicken, fresh spinach, and fragrant basil. Served with herb butter breadcrumbs on top to make it crunchier and add more flavor.
Ingredients: 8 oz pasta. 2 chicken breasts, sliced. 2 cups cherry tomatoes. 2 cups baby spinach. 1/2 cup fresh basil leaves, chopped. 3 cloves garlic, minced. 1/4 cup olive oil. Salt and pepper to taste. 1/2 cup breadcrumbs. 2 tablespoons butter. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1 teaspoon dried parsley. Grated parmesan cheese for serving.
Instructions: Follow the directions on the package to cook the pasta. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-high heat. It will take about 4 to 5 minutes on each side for the chicken slices to turn golden brown after you add them. Take the chicken out of the pan and set it aside. Put cherry tomatoes in the same pan. It will take about 5 to 6 minutes of cooking until they start to burst and char. For an extra one to two minutes, until the garlic smells good, add the minced garlic. Put the chicken back in the pan. Chopped basil and baby spinach should be added. Add pepper and salt. In about two to three minutes, the spinach should wilt. In a different small pan, melt the butter over medium-low heat. Put in dried oregano, thyme, and parsley, along with the bread crumbs. It will take about 34 minutes of stirring often cooking until the breadcrumbs are golden and crispy. To serve, mix the cooked pasta with the chicken, tomato, and spinach. Add ground Parmesan cheese and herb butter breadcrumbs on top. Have fun!
