Remember when I said I'd post some of my vegetarian recipes? Well, I'm hoping to actually type them up soon, but for now, here's one of my faves: Ingredients:* Approx. 1/3-1/2c. Trader Joe's Harvest Grains Blend** 1 T butter 1 Red bell pepper 1/2 large onion (I used white here, but any kind is fine!) Approx. 1/2-1 C green beans OR sugar snap peas (I prefer the snap peas) 1/2 C yellow corn 1/2 C steamed peas 1/3 C EVOO 1/2 T minced garlic Instructions: 1. Prepare peas, corn, green beans/snap peas as needed (steamed or boiled is best 2. Boil water--measure water in a 1:3 ratio to the grains, so here I would do 1/3 C grains to 1 C water. Once boiling, add the butter and grains and simmer until water is absorbed, about 10 minutes. 3. In a skillet/frying pan, add the EVOO, all veggies except the peas, and garlic. Over medium heat, stir-fry the veggies until the onions are clear. 4. Transfer grains to a bowl, and add the desired amount of veggies on top, as well as the peas.*** 5. Serve and enjoy! *NOTE: this particular recipe is designed to serve one person, but there will be leftovers of the veggies! **If you don't have a Trader Joe's nearby, or can't find this mix, it's made primarily of couscous, with red quinoa, mini garbanzo beans, and one or two other grains. ***The only reason I add the peas later is because I don't like them stir-fried. You could totally add them to the pan and stir-fry them as well!
