My homemade seafood fried rice. Yes it has peas, corn and carrots and I know it’s not supposed to. Don’t tell me how to live my life! 😂 - 4 cups cooked & cooled white rice (use 3/4 normal water in rice cooker… and get a @cuckoo_america rice cooker if you don’t own a rice cooker) - 4 Tbs of fragrant vegetable oil (fragrance from frying garlic, onion, ginger and green onion in oil then filter) - 4 tsp sesame oil - 3 1/2 Tbs white sugar - 5 large eggs (not beaten, but cracked and ready in bowl) - 1 medium sweet onion (chopped) - 3 large cloves of garlic (finely minced) - 2 Tbs finely chopped green onion - 2 to 3 Tbs soy sauce (to your taste) - 3/4 to 1 tsp white pepper (to your taste) - 1/2 tsp MSG (not optional, don’t be weak! 😂) - 6 oz of seafood (I used about 4 oz shrimp w/ peel on and 2 oz squid rings) - 1/3 cup mixed veggies (optional) - salt & pepper to taste 1. Mix 1 Tbs fragrant vege oil with rice along with 1 tsp of sesame oil. Mix until rice is no longer clumpy. 2. Add 1 Tbs fragrant vege oil and 1 tsp sesame oil to a large well seasoned wok and heat to medium-high heat (close to smoke point). 3. Fry seafood until fully cooked. Remove seafood and set aside. 4. Add 1 Tbs of of vege oil to wok and heat on high heat (smoke point). 5. Add eggs and stir quickly as eggs can burn. 6. Pull eggs to one side and add 1/2 Tbs of vege oil and 1 tsp sesame oil opposite side as eggs and heat till smoke point. 7. Add chopped onion and garlic. Cook onion till translucent or until slightly charred (stir vigorously to avoid burning garlic). 8. Toss in rice, green onion and mixed vege (if desired) and mix ingredients thoroughly on high heat. 9. Pull rice to one side and add remaining vege and sesame oils and toss in seafood and cook briefly until heated. Mix all ingredients well. 10. Add soy sauce, msg, sugar, white pepper and mix thoroughly.
