How to keep the beef tender while still wanting to have the wok aroma for the fried rice?

If you enjoy beef, I’d like to share a beef fried rice recipe. 

In this recipe, I briefly blanch the beef (过油) in oil to ensure it's tender and not overcooked.

I fry the rice separately over high heat and combine the blanched beef at the last moment.
