Another treat from yesterday’s get together with friends: smoked salmon dip. Basically a mix of smoked fish, cream cheese, sour cream, dill, scallions and lemon juice (for specific recipe click the link in the profile). Easy peasy, make in advance and it keeps nicely for leftovers during the week (also it’s a good filling for an omelet). Company today for a Sunday afternoon of cocktails, nibbles and dinner with friends so we can catch up on each others’ recent travels. I made a version of marinated mushrooms (first recipe on my website). Also serving puff pastry pizza, hummus, smoked salmon dip and for dinner: Teriyaki salmon (recipes all on my website). Lemony Marinated Mushrooms 8-10 ounces white mushrooms 3 scallions, chopped 1 medium clove garlic, chopped 1 tablespoon chopped parsley 1 tablespoon chopped dill 1 tablespoon olive oil 1-1/2 tablespoons lemon juice Salt to taste Pinch of cayenne or other pepper Wash and cut the mushrooms into bite size pieces. Place them in a saucepan, cover with water and bring to a boil. Lower the heat and simmer for 5 minutes. Drain and place in a bowl. Add the scallions, garlic, parsley and dill and toss the ingredients. Add the olive oil and lemon juice and toss the ingredients. Season with salt and pepper. My brother and sister-in-law came over last night and no one wanted actual dinner. I had served a bunch of hors d’oeuvre and we stuffed ourselves on those. Big winner was these Naan pizzas, the recipe from my book, The Modern Kosher Kitchen, and is basically this quick and easy nibble: spread 1/2 cup mango chutney on two naan breads. Add some chopped cooked cauliflower. You can also add a little grated raw or cooked carrot (I didn’t yesterday), and top with grated mozzarella and Gouda cheese. Bake in a 400F oven for maybe 15 minutes. Cut and serve.
