Click here! “Fun Fridays” at our house means that lunchtime is something special – I either make a cool new appetizer, or maybe some kind of hot dip, or something like pimiento cheese or cucumber finger sandwiches. artichoke dip
I have a couple recipes for this … both delicious. They are somewhat similar, but have slightly different flavor profiles, and I’ve found that I don’t prefer one over the other. Try them both and decide for yourself.
The first one comes to my from Kim O’Keefe, who is not only a fabulous cook and an even better friend, but was kind enough to wash my hair (Mama says I’m too old for hair this long)…

Favorite Football Dip- Black-eyed peas and Artichokes
The weekend is upon us and it really is not complete without football! Raised in a football family, I support and adore my Auburn Tigers (who really don't quite have it this year, but that's beside the point). As any good fan knows, half the fun of the game revolves around food and below is my favorite hot dip that is gone in a flash. War Eagle, Roll Tide, Go Vols, Dawgs, or Hogs- enjoy!
We take our football very seriously in my family
Hot Black-eyed pea and Artichoke Dip
1 medium onion, diced
2 tablespoons butter
1 16 ounce can of black-eyed peas, rinsed and drained
1 14 ounce can artichoke hearts, drained and chopped
2 tablespoons grated Parmesan cheese
1/2 cup each of sour cream and Hellman's mayonnaise
1 envelope of buttermilk ranch salad dressing mix
1 cup shredded mozzarella cheese
Saute the diced onion in butter until translucent. Mix all ingredients together and spoon into a buttered casserole no deeper than a couple of inches. Bake at 350 for 30 minutes. Serve with tortilla or pita chips.
Nobody said this was low-fat, or heart healthy but in moderation, it's wonderful! If you have men at your house, get your bite early. Once they know it's out of the oven, it's gone.
