The sweet strawberries, sour raspberries, and creamy coconut in these Strawberry Raspberry Cream Pops taste great together. They are great for a cool snack on a hot day!
Ingredients: 1 cup strawberries, hulled and chopped. 1 cup raspberries. 1 cup coconut cream. 2 tablespoons honey or maple syrup. 1 teaspoon vanilla extract. 1/4 cup shredded coconut optional, for garnish.
Instructions: Put strawberries, raspberries, coconut cream, honey or maple syrup, and vanilla extract in a blender. Mix until it's smooth. Put the mixture into popsicle molds, leaving some room at the top for them to rise. Place a popsicle stick in each mold. Let it freeze for at least four hours, or until it's solid. Just run the molds under warm water for a second to get the popsicles out of the molds after they are frozen. Take the popsicles out of the molds, and if you want, you can decorate them by rolling them in shredded coconut. You can serve it right away or put it in an airtight container and put it in the freezer.
