Any advice for going vegan when you hate veggies?
Hello! I had the same problem when I first went vegan. I had been vegetarian for awhile and eating mostly junk food, and I knew that that was no longer going to cut it (as it is, I had anemia because my diet mostly consisted of macaroni and cheese and veggie chicken nuggets). I started to eat mostly whole foods, sticking mostly with ones I already liked and slowly introducing new ones into my diet. I started small, and with the help of spices and exploring different kinds of cooking, I’m now able to say that I really love vegetables. A favorite easy meal of mine is brown rice with mixed veggies, steamed kale and half an avocado, topped with salt, earth balance butter, and some garlic powder and paprika if I’m in the mood.
It is very very important to eat a balanced diet. You can have junk food so long as you’re also getting a healthy amount of grains, legumes, nuts, cooked and raw vegetables, and fruit. Plant milks are also very helpful for getting all the nutrients that you need.
