Made Caitlin Shoemaker's Broccoli Rice Casserole. It's totally healthy comfort food and SO EASY! Just dump all ingredients into a casserole dish and slide it into the oven for an hour. While it was bubbling away I slaughtered a pumpkin and added half of it to bake in the oven for the last half hour. So that's 2 healthy dinners for 2 (hubby liked it yay!) and 2 lunches. The recipe is four servings but I like to stretch it out by adding an extra veg on the side.
Oh, since I didn't have any chickpeas I used cannelini beans.
Last week at Nonna I leafed through her ancient Sofia Loren cookbook and saw a recipe where she stuffed bell peppers with a a mixture of a soffrito (sautéed garlic, onion,carrot, celery), stale bread moistened with broth, herbs and toasted pine nuts.
I had some old bread lying around in the freezer and now that autumn has officially arrived I really felt like making stuffing, Italian style. The herbs gave it a very savory and meaty flavor. I used ground coriander, dried sage, rubbed ground fennel seeds and fresh rosemary. But instead of stuffing bell peppers, I used it as a topping for roasted pumpkin. It was absolutely delicious.
Still unemployed and eating is crap but on the bright side: I made gnocchi for the first time from leftover mashed potatoes #thrifty and I have also learned how to can my homemade apple sauce!
Brinjal eggplant sweet potato stew
I love relaxed but productive Sundays like these. Hubby and I, at home together all day while it's raining outside. I did go outside for a long run and then made apple sauce of all the remaining apples. After that we cooked this delicious plantbased dinner together! 💕
I planned on making my eggplant / sweet potato / peanut butter stew but last week my mom brought me a jar of brinjal (sweet & spicy eggplant pickle) ❤️ and a packet of papadums so I subbed the the brinjal for the peanut butter. It was sooo good. It gets a lot of veggies in hubby too!
3 onions
An eggplant
Raz el hanout or garam masala, cumin, chili
2 small cans tomato paste
2 large sweet potatoes
4 cloves of garlic
1/4 cup lentils
Enough water to make sure it cooks without burning (I added about 2 cups)
A tablespoon of brinjal
Lemon juice to taste
Papadums

Vegan Broccoli Quiche
Vegan puff pastry filled with tender pre-steamed broccoli and capers and cream of cannelini beans, some leftover tofu, almond milk, corn starch, garlic, Italian herbs, turmeric, lemon juice, salt & pepper. Bake for 40 min @ 200C. 👌🏼
