A rich customer compliments Joseph on his outstanding craftsmanship.  Joseph thanks the customer and assures them that he is not some average Joe, which is his way of accepting and agreeing with the customer's compliment (but not, like, in a prideful way, just honestly).

An "average Joe" is a person who isn't particularly special.  Because Joe is a common name, it is used in this saying to indicate someone about whom nothing stands out.  Of course, you and I know that all you Joes are special in your own special way, no matter how completely uninteresting God made you.  Don't think of yourselves as being the most BORING people ever.  Think of yourselves as being the MOST boring people ever!  Not everyone gets to be the most of something!
