Loaded Idaho Potato Skins are a classic appetizer showcasing the beloved Idaho potato. They're crispy on the outside, fluffy on the inside, and loaded with gooey cheese, crispy bacon, and tangy sour cream.
Ingredients: 6 large Idaho potatoes. 1/4 cup melted butter. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 1/4 cup sliced green onions. 1/2 cup sour cream. Salt and pepper to taste.
Instructions: Preheat oven to 400F 200C. Scrub potatoes and pierce each with a fork. Bake potatoes for 45-60 minutes or until tender. Let potatoes cool slightly, then cut in half lengthwise. Scoop out potato flesh, leaving a 1/4-inch shell. Brush both sides of potato skins with melted butter. Sprinkle salt and pepper over skins. Place skins on a baking sheet and bake for 10 minutes until crisp. Remove from oven and fill each skin with cheese and bacon. Return to oven and bake for an additional 5 minutes or until cheese is melted. Top with sliced green onions and serve with sour cream.
