These ultimate sous vide steaks are tender, juicy, and perfectly cooked to your desired level of doneness. Sous vide cooking ensures that the steaks are evenly cooked from edge to edge, and finishing with a quick sear adds a beautiful crust and additional flavor.
Ingredients: 4 beef steaks such as ribeye or sirloin, about 1 1/2 inches thick. 4 cloves garlic, minced. 4 sprigs fresh rosemary. Salt and freshly ground black pepper, to taste. 2 tablespoons olive oil.
Instructions: Warm up the water bath for sous vide to 129F 54C. On both sides, sprinkle the steaks with a lot of salt and pepper. Put each steak in its own vacuum-sealed bag or freezer bag that can be closed again and again. Each bag should have minced garlic and a rosemary sprig added to it. Add olive oil on top. You can vacuum-seal the bags with a vacuum sealer or use the water displacement method to remove air from the bags by hand. Once you're sure the water bath is the right temperature, put the sealed bags inside it. Make sure that the steaks are completely submerged. For medium-rare, cook the steaks in the sous vide water bath for one to two hours. If you want to make the steaks dry, take them out of the bags after the cooking time is up. Set a grill or cast iron pan on high heat. For one to two minutes on each side, sear the steaks until a golden crust forms. After cooking the steaks, let them rest for a few minutes. Have fun!
