I was gonna ask you which ones, but hey, I want to do them all anyway!
1. How are they with clothing textures? are they fine with fashionable but uncomfortable clothes or do they prefer casual & comfy? or other?
Y’know, I don’t think Will has sensory issues with clothing other than mild discomfort with pretty much everything, so this is more emotional than sensory. Will would like to be a soft, but being a soft feels very unsafe. So layers! Lots of layers for the cocoon he needs.
It’s canon that he rubs his fingertips together a lot!
3. how do they feel about touch?
Ha ha HA on one hand, it has such a heavy and distressing emotional component, especially with the strong physicality as compliance thing in canon, but on the other hand. He just wants to connect. Be comforted.
4. favourite foods & textures?
Oh boy this sure is the wrong fandom for food questions. Or maybe the extremely right fandom. Anyway I don’t think Will is the type to go out of the way for food, so his favorite is fish, more for the process of preparation than attributes of the food itself.

He probably hates certain foods for associated sense memories–I would imagine he gags around hospital-like food.

Will is very aware that he has the traits of this diagnosis, and he is grumpy about it. He probably realized in high school, the first time he’s ever around non-family other people for extended amounts of time and has enough life experience to parse that hey, he is different in this particular way.
(I think it was @damnslippyplanet who proposed the headcanon that Will’s dad and entire family are nebulously DD, and thus told everyone who wanted to diagnose Will to fuck off, he’s perfectly normal, which, YES.)

It…didn’t mostly. He has always been aware that he is different in an inborn way, and that he is going to be lonely. A label for part of that difference didn’t change that.

DO THEY HAVE FRIENDS WHAT A SAD QUESTION FOR WILL. Okay, I’m just going to list out all his friends and almost-friends: Alana is accommodating in a very deliberate, careful way. Jack, if anything, takes advantage. Bev thinks Will is neat and treats him about as roughly as she does anyone else. Abigail is most certainly not Will’s friend, but she has this part of Will filed away under “no feelings,” no matter what Freddie Lounds says about him. Margot doesn’t quite grasp what is up with Will, but she is okay going with it. Peter (PEEEETEEEERRR) gets it and puts his trust in Will because of it.
11. how do they prefer to communicate? are they non verbal/have periods of being non verbal? do they use sign language? do they talk? do they prefer text, etc?
Will seems to be a very sensory/kinetic person. He talks, but words are never going to be fully part of how he interprets the world.

Dog care! He canonically makes his own dog food, so I imagine he is a huge nerd about that kind of thing. I want to say bugs because he wrote a monograph about them, but then you start to get into that Will Graham territory of “Special Interest or Intrusive Thought?”

Will Graham’s general philosophy of most human interaction seems to be “say whatever will get them to leave you alone,” so, like, canonically, he seems to deploy this fact carefully towards that end.

Hannibal is so…argh. He thinks Will is special and perfect the way he is, and sees the autism as just another part of him…so fair game to use to distress him whenever he wants. Goddamnit, Hannibal.

For all that the autism is something that inside and curled around him, sometimes Will wants to curl around it. To protect that part of himself. There’s no point, of course, but he still has the urge.
17. how do they prefer their hair? (if they have hair of course), is it a big issue sensory wise or is it not?, do they have their hair for style? comfort? do they find it hard to take care of it? or is it well maintained? do they have to have a certain product or is any ok?
HA HA historically it’s been shaggy and overgrown to hell because he is not cut out for frequent maintainence, but then The Murder Husband Makeover happened. (I recognize that realistically, Will would have to do SOMETHING to his pre-makeover hair to make it look that good, but whatever he is an anime character and this makes more sense.) The real question is what he’s going to do with it post-Fall.
18. are they generally well kept? or do they find it hard to keep up good hygiene?
Will canonically is good at showering and changing his clothes!
