Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup cocoa powder. 1 cup granulated sugar. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup unsweetened almond milk. 1/3 cup vegetable oil. 1 tablespoon apple cider vinegar. 1 teaspoon vanilla extract. 1/2 cup dairy-free chocolate chips optional. Cooking spray or oil for greasing the pan.
Instructions: In a mixing bowl, combine the flour, cocoa powder, sugar, baking soda, and salt. Add almond milk, vegetable oil, apple cider vinegar, and vanilla extract to the dry ingredients. Mix until well combined. Fold in the dairy-free chocolate chips if using. Grease a 7-inch round cake pan that fits into your Instant Pot. Pour the batter into the greased pan. Add 1 cup of water to the Instant Pot and place the trivet inside. Carefully lower the cake pan onto the trivet. Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 35 minutes. Allow the pressure to naturally release for 10 minutes, then do a quick release. Carefully remove the cake pan from the Instant Pot and let it cool on a wire rack. Once cooled, carefully remove the cake from the pan and serve.

Instructions: To make the yogurt smooth, put Greek yogurt, sweetened condensed milk, and sugar in a large bowl and mix them together using a whisk. Add the eggs and keep whisking until everything is well mixed. Mix in the cardamom powder and milk that has been soaked in saffron. Pour the mixture into an Instant Pot-safe bowl that can handle high temperatures. Once the Bhapa Doi is cool enough to touch, put it in the fridge for at least 4 hours or overnight. Before serving, top with chopped pistachios and sliced almonds.
