A traditional Irish dish called Dublin Coddle is made with layers of potatoes, bacon, sausages, and onions that are cooked slowly in a tasty broth until the potatoes are soft and the top is golden brown.
Ingredients: 500g potatoes, peeled and sliced. 400g Irish bacon, sliced. 8 pork sausages. 2 large onions, sliced. 2 cloves garlic, minced. 500ml chicken stock. 1 tbsp fresh parsley, chopped. Salt and pepper to taste.
Instructions: Preheat oven to 180C 350F. In a large ovenproof pot, layer potatoes, bacon, sausages, onions, and garlic. Pour chicken stock over the layers and season with salt and pepper. Cover the pot and bake for 1 hour. Uncover and bake for an additional 30 minutes or until potatoes are tender and the top is golden brown. Sprinkle with chopped parsley before serving.
